200 g green beans (approximately 20 pods)
1/2 onion
1 garlic clove
2 tbsp olive oil
1 tbsp all-purpose flour
1 tsp sweet paprika
1/2 tsp ground cumin
1 cup boiling water
Sea salt and freshly ground black pepper to taste
Where to find ingredients
You can find these fresh ingredients at local markets (sokoni) or large supermarkets in major cities. For the beef, ask your butcher for a lean cut suitable for mincing. Sweet paprika and cumin are available at specialty spice stalls or the baking aisle of larger grocery stores.
Preparation method
- Take the meat out of the refrigerator shortly before starting to let it reach room temperature
- Bring the water to a simmer over low heat
- Wash the green beans thoroughly
- Trim the ends and cut them into 1.5 cm pieces using a diagonal slice
- Dice the onion into 1 cm cubes
- Peel and finely mince the garlic
- Heat a large pot or frying pan over medium heat
- Add 1 tablespoon of olive oil and distribute the meat in small portions across the pan
- Allow the meat to brown undisturbed for 1 minute
- Season with salt, pepper, and sprinkle the flour over the meat
- Cook for 5 minutes, stirring occasionally so the pieces break up and brown evenly
- Remove the browned meat from the pan, place in a bowl and set aside
- Keep the pan on the heat and add the remaining olive oil along with the onion
- Add a pinch of salt and sauté the onion for 2 minutes until softened
- Add the green beans to the pan
- Season with salt and pepper and sauté for 2 minutes until lightly browned, keeping them crisp
- Add the minced garlic, paprika, and cumin
- Sauté for 1 more minute until the spices become fragrant
- Pour in the hot water gradually while scraping the bottom of the pan with a spatula
- Return the browned ground beef to the pan
- Cook for another 2 minutes until the sauce has thickened
- Serve immediately
