Where to find ingredients
You can find dried shrimp, dende oil, and fresh fish at local markets in Dar es Salaam, such as Kariakoo Market or specialized produce stalls. Supermarkets in the city center typically stock coconut milk, nuts, and spices in the baking or international foods aisles. If dende oil is unavailable, it remains the essential ingredient for authenticity; ensure you check specialty grocers for this specific red palm oil.
Preparation method
- Soak the dried shrimp in water to remove excess salt.
- Roast the peanuts and remove their skins.
- Season the fish steaks with salt and black pepper, then set aside.
- In a pan, heat half of the dende oil and sauté the onion, tomato, ground coriander, and bell pepper.
- Place the seasoned fish steaks over the sautéed base.
- Cook for approximately 5 minutes.
- Sprinkle with the red chili flakes.
- Drizzle with the lemon juice and the remaining dende oil.
- Cover the pan, set to medium heat, and cook until the fish is tender.
- Remove the fish from the liquid, flake it into small pieces, and keep the cooking liquid.
- In a blender or food processor, combine the drained dried shrimp, cashews, roasted peanuts, grated ginger, soaked bread, coconut milk, and water.
- Pulse until you achieve a smooth yet slightly textured paste, being careful not to over-process.
- Gently fold the blended paste into the reserved liquid in the pan.
- Place over low heat, stirring constantly, until the mixture thickens to a creamy consistency.
- Fold the flaked fish back into the mixture.
- Adjust salt and pepper if necessary.
- Serve hot.
