You can find fresh, ripe tomatoes and high-quality basil at local farmers' markets or the produce section of any standard grocery store. Use coarse salt and quality extra virgin olive oil found in the baking or condiment aisles.
Preparation
- Wash and dry the tomatoes well
- Remove the top of each tomato
- Place the tomato with the cut side facing down on a cutting board
- Make cuts in a cross pattern and then in an X pattern to obtain 8 equal wedges
- Place the tomato pieces in a sieve or colander set over a bowl
- Spread the coarse salt over them and mix well so that all are coated
- Cover the container with plastic wrap or a plate
- Refrigerate for 24 hours to let the tomatoes drain and maintain their texture
- If you need to serve sooner, let them drain for at least 30 minutes
- Remove from the refrigerator at the moment of serving
- Discard the liquid accumulated in the bowl
- Shake the wedges gently to remove excess coarse salt
- Arrange the tomatoes on a serving plate
- Finish by seasoning with olive oil and black pepper
- Add fresh basil leaves to taste and serve
