Classic Ground Beef Filling for Brazilian Pastéis

Ingredients

2 tablespoons cooking oil
1 medium onion, chopped
3 cloves garlic, minced
500g ground beef
1 tomato, seeded and chopped
Salt to taste
Black pepper to taste
Chopped fresh parsley and chives (cheiro-verde)

Where to find ingredients

You can find all these fresh ingredients at your local supermarket, neighborhood grocery store, or farmers market. Look for fresh herbs in the produce section.

Preparation

  1. Heat the oil in a pan over medium heat
  2. Sauté the onion and garlic until they begin to lightly brown
  3. Add the ground beef to the pan
  4. Stir continuously to break up clumps and allow the meat to brown evenly
  5. Add the chopped tomato to the mixture
  6. Cook while stirring occasionally until all the liquid from the preparation has completely evaporated
  7. Season with salt and black pepper
  8. Adjust to your taste
  9. Turn off the heat and stir in the chopped fresh parsley and chives
  10. Wait for the filling to cool completely before filling the pastry dough to ensure the dough remains intact

Notes

The main goal for this filling is to keep it dry, preventing excess moisture from softening the dough while frying. The secret is to sauté the mixture until all the liquid has fully reduced before finishing the preparation.
