Homemade Crispy Pastel Dough

Ingredients

500g all-purpose flour
1 tablespoon salt
2 tablespoons oil or melted lard
1 tablespoon white vinegar
200ml warm water

Where to find ingredients

You can find all-purpose flour, white vinegar, and cooking fats at any local grocery store or supermarket in the baking and oil aisles.

Preparation

  1. Combine the flour and salt in a large bowl
  2. Create a well in the center of the flour
  3. Add the oil or lard and the vinegar into the center
  4. Gradually pour in the warm water
  5. Mix the ingredients with your hands until the dough pulls away from your fingers
  6. Transfer the dough to a smooth surface
  7. Knead vigorously until the dough becomes smooth and uniform
  8. If the dough feels too stiff, add a few drops of water
  9. If the dough feels sticky, sprinkle with a little extra flour
  10. Cover the dough with a clean kitchen towel
  11. Let it rest for 20 minutes
  12. Roll out the dough with a rolling pin until it is very thin
  13. Cut into your desired sizes and shapes
  14. Distribute your preferred filling over the dough pieces
  15. Press the edges firmly to seal and prevent them from opening during frying
  16. Deep-fry in hot oil until golden brown
  17. Drain any excess oil and serve immediately

Notes

To ensure your pastéis (fried hand pies) are extra crispy and not greasy, the key is to knead the dough thoroughly and roll it out very thinly before frying.
