Plantain Farofa (Farofa de banana-da-terra)

Ingredients

2 green plantains
2 cups yellow flaked corn flour
75 g butter, cubed
1 tbsp vegetable oil
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

Find plantains and corn flour in local fruit markets and specialty grocery stores. For the butter and oil, any general grocery store will suffice. As a substitute for plantains, you may use firm, non-sweet bananas, though the texture and flavor profile will differ from the traditional version.

Preparation method

  1. Trim the ends of the plantains and peel them.
  2. Slice each plantain in half lengthwise.
  3. Cut each half lengthwise again.
  4. If the resulting strips are too thick, slice them into three pieces.
  5. Dice each piece of plantain into approximately 1 cm cubes.
  6. Heat a large non-stick skillet over medium heat.
  7. Add the oil to the skillet.
  8. Place the diced plantains in the pan and season with a pinch of salt.
  9. Brown the plantains for about 6 minutes, stirring occasionally, until lightly caramelized. Cooking time may vary depending on the ripeness of the plantains; riper ones brown faster.
  10. Reduce the heat.
  11. Add the butter cubes to the pan and stir until completely melted.
  12. Season with 1 teaspoon of salt and black pepper to taste.
  13. Add the corn flour gradually, stirring continuously with a spatula to incorporate well.
  14. Cook for another 4 minutes, stirring constantly, until the farofa is crispy and well-toasted.
  15. Turn off the heat and serve immediately.
