Black pepper to taste
5 cups water
1 liter vegetable oil for frying
1 cup milharina (fine cornmeal)
Salt to taste
Black pepper to taste
5 cups water
Where to find ingredients
Milharina can be found in specialty Latin American grocers. As a substitute, you may use fine-ground yellow cornmeal or polenta flour.
Preparation method
- In a large pot, bring the water to a boil over medium heat.
- Once the water is boiling, add the milharina gradually while stirring constantly to prevent lumps from forming.
- Season with salt and black pepper to taste.
- Continue cooking and stirring for approximately 15 minutes, or until the mixture thickens and begins to pull away from the bottom of the pot.
- Remove from heat and allow the polenta to cool in the pot for a few minutes.
- Lightly grease a baking sheet or a glass dish with a small amount of oil or olive oil.
- Transfer the warm polenta into the prepared dish, spread it evenly with the back of a spoon, and let it cool completely.
- Once cooled, cover and refrigerate for at least one hour or overnight.
- Heat the oil in a deep pot until it reaches approximately 180°C (350°F).
- Remove the chilled polenta from the refrigerator, place a cutting board over the dish, and flip it over to unmold.
- Cut the firm polenta into uniform sticks or squares.
- Deep-fry the pieces in small batches for about 10 minutes, or until they turn golden brown and crispy.
- Remove with a slotted spoon and place on paper towels to drain any excess oil.
- Serve hot as a snack or a side dish.
