Preparation method
- Season the rib racks with the crushed garlic, lemon juice, and salt
- Place the seasoned meat in a roasting pan
- Cover the pan tightly with foil
- Bake in a preheated medium oven, about 180°C, for 3 hours
- Remove the foil
- Keep roasting for longer, turning the meat occasionally and basting with beef stock, if using, or with the pan juices, until well browned
- If the pan juices dry out, add a little boiling water to prevent sticking and to make more sauce
