200 g green beans, about 20 units
1/2 onion
1 garlic clove
2 tablespoons olive oil
1 tablespoon wheat flour
1 teaspoon sweet paprika
1/2 teaspoon cumin
1 cup water
Salt and freshly ground black pepper to taste
Where to find ingredients
Minced beef can be bought from butchers or supermarket meat counters; if patinho is unavailable, use lean minced beef as a substitute, keeping patinho as ideal. Green beans, onion, garlic, olive oil, flour, paprika, cumin, salt and pepper are available in supermarkets, markets and general food shops.
Preparation method
- Take the beef out of the fridge a little before starting so it reaches room temperature
- Put the water on to boil over low heat
- Wash the green beans well
- Remove the ends and cut them into 1.5 cm pieces, using a diagonal cut
- Chop the onion into 1 cm cubes
- Peel and finely chop the garlic
- Heat a large pan or frying pan over medium heat
- Add 1 tablespoon olive oil and spread the beef in small portions around the pan
- Let the beef brown without stirring for 1 minute
- Season with salt and pepper and sprinkle the wheat flour over the beef
- Cook for 5 minutes, stirring occasionally so the pieces loosen and brown evenly
- Place the browned beef in a bowl and set aside
- Keep the pan on the heat and add the remaining olive oil and the onion
- Add a pinch of salt and sauté the onion for 2 minutes until soft
- Add the green beans to the pan
- Season with salt and pepper and sauté for 2 minutes until lightly browned, keeping the texture crunchy
- Add the garlic, paprika and cumin
- Sauté for 1 more minute until the spices release their aroma
- Pour in the hot water little by little while scraping the bottom of the pan with a spatula
- Return the minced beef to the pan
- Cook for another 2 minutes until the sauce thickens
- Serve immediately
Observations
This dish is an excellent option for daily meals, balancing the protein of the beef with the crunch and freshness of the green beans. Follow the steps to brown the beef properly before adding the vegetables.
