Ingredients
5 eggs

200 g dark cooking chocolate, chopped
1/2 tablespoon instant coffee
1 teaspoon rum (optional)

Preparation method
- Whisk the egg whites until stiff peaks form using an electric mixer
- Gradually add the egg yolks and sugar to the stiff whites, continuing to beat until the mixture is smooth
- Remove the mixture from the mixer
- In a separate bowl, sift together the cocoa drink mix, instant coffee, and plain flour
- Gently fold the dry ingredients into the egg mixture
- Grease a rectangular baking tin and line it with baking parchment, greasing the parchment as well
- Pour the batter into the prepared tin and bake in a preheated oven at a medium heat setting
- While the sponge bakes, prepare the filling: heat the thickened cream in a double boiler
- Add the chopped chocolate to the warmed cream and stir until the chocolate is completely melted and the mixture is smooth
- Incorporate the rum (if using) into the filling and mix well
- Set the filling aside
- Remove the swiss roll from the oven and turn it out immediately onto a clean, dry tea towel that has been dusted with sugar
- Roll the swiss roll up while still hot using the towel and leave to cool completely
- Carefully unroll the cooled sponge
- Spread half of the filling over the sponge
- Roll the swiss roll back up, this time with the filling inside
- Cover the swiss roll with the remaining cream
- Decorate with fresh mint leaves and cherries
- Place in the fridge for at least 30 minutes before serving
