Where to find ingredients
Most ingredients like chicken, flour, eggs, and dairy can be found in any local grocery store or supermarket. For authentic Brazilian flair, use fresh coriander or spring onions from local markets. Stock cubes are standard in the grocery aisle. If you cannot find a specific type of 'requeijão' (a Brazilian creamy cheese), a standard full-fat cream cheese or a spreadable processed cheese from the dairy section is an excellent substitute for the filling's creamy texture.
Preparation method
- To make the filling, heat the olive oil in a pan and sauté the minced garlic and chopped onion
- Stir in the shredded chicken and seasonings, sautéing for about 5 minutes
- Remove from the heat, mix in the cream cheese, and set the filling aside
- In a separate large saucepan, combine the water, milk, stock cubes, mashed potato, and butter
- Bring the mixture to a boil
- Add the flour all at once, stirring vigorously until the dough pulls away cleanly from the bottom of the pan
- Transfer the dough to a clean, lightly greased surface
- Knead the dough until smooth and let it cool slightly
- Take small portions of the dough, press a space in the middle to add the chicken filling, and shape into a smooth teardrop or chicken thigh shape
- Dip each shaped coxinha first into the beaten egg and then coat thoroughly in breadcrumbs
- Heat the oil in a deep pot and fry the croquettes until they are golden brown and crispy all over
- Remove the fried croquettes with a slotted spoon and drain on kitchen paper to remove any excess oil
