Creamy, Easy Chocolate Mousse (Mousse de chocolate cremosa)

Ingredients

6 egg whites
2 cans heavy cream, drained
2 packets unflavoured gelatin
6 tbsp cocoa powder
6 egg yolks
1 litre milk
12 tbsp sugar

Where to find ingredients

Look for the ingredients at supermarkets in the dairy, eggs, baking, and dessert aisles. If needed, use unflavoured gelatin as the substitute for gelatin without flavour.

Preparation method

  1. Whip the egg whites until stiff peaks form and fold in the heavy cream, reserving the mixture
  2. In the mixer, combine the egg yolks, cocoa powder, milk and sugar
  3. Beat all the ingredients well until you have a smooth mixture
  4. Transfer the mixer mixture to low heat, stirring constantly, until it thickens slightly
  5. Dissolve the packets of unflavoured gelatin according to the package instructions
  6. Add the dissolved gelatin and the thickened cream to the reserved mixture with the egg whites and heavy cream
  7. Gently fold the whipped egg whites into the mixture, stirring from bottom to top so as not to lose the air
  8. Divide the mousse into individual glasses
  9. Refrigerate for at least 4 hours, or until completely set

Observations

This is a traditional chocolate mousse recipe, a classic among Brazilian desserts that wins everyone over with its bold flavour and light, airy texture. Perfect for special occasions or simply to sweeten the day, it is surprisingly simple to prepare, using easy-to-find ingredients.

Chocolate mousse is made from a creamy base that gets its lightness from whipped egg whites and the addition of gelatin to ensure the ideal firmness. Its unmistakable flavour comes from cocoa powder, which can be adjusted to suit your taste.
