You can find fresh butternut pumpkins and aromatics at local markets or produce stalls. If butternut pumpkin is unavailable, you can substitute with any firm orange-fleshed pumpkin variety common in your area.
Preparation method
- Peel the pumpkin and cut the flesh into 2 cm cubes.
- Finely mince the garlic cloves.
- Place a large pot or frying pan over medium heat with the olive oil.
- Add the garlic and sauté for just 1 minute to infuse the oil, being careful not to let it burn.
- Add the pumpkin cubes and salt to the pot.
- Stir the ingredients occasionally for 10 minutes, until the pumpkin begins to soften.
- Place the lid on the pot and reduce the heat to the lowest setting.
- Let it cook for 5 minutes so the pumpkin finishes softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon, until you reach your preferred texture.
- Turn off the heat and serve immediately.
