Where to find ingredients
You can find fresh produce like cauliflower, carrots, and radishes at local neighborhood markets or the fresh food section of larger grocery stores in Honiara. Quality olive oil and dried paprika are readily available in the international goods aisle of any well-stocked supermarket.
Preparation method
- Preheat the oven to 220°C (430°F).
- Wash the cauliflower florets in a bowl of water.
- Remove the florets from the water with your hands, leaving any dirt at the bottom of the bowl.
- Drain well in a colander.
- Thoroughly clean the radish skins with a small vegetable brush under running water.
- Dry the radishes and cut them in half or into quarters if they are large.
- Peel the carrots and cut them in half crosswise.
- Cut the thinner section of the carrots into four strips lengthwise.
- Cut the thicker section of the carrots into six strips lengthwise.
- Arrange all the vegetables on a large baking sheet.
- Drizzle the vegetables with olive oil.
- Sprinkle with the paprika, salt, and black pepper.
- Toss everything well to ensure every piece is coated with the oil and spices.
- Spread the vegetables on the baking sheet, leaving enough space between them so they roast evenly and get nicely browned.
- Place in the oven for approximately 30 minutes.
- Turn the vegetables with a spatula halfway through the cooking time to brown all sides.
- Remove from the oven as soon as they are tender and golden.
- Serve immediately.
