Ingredients

200 g of okra (about 20 units)
1/2 red bell pepper
1/2 red onion
1 garlic clove
1 can of peeled diced tomatoes (with juice)
2/3 cup of water
1 tablespoon of olive oil
1/2 teaspoon of cumin seeds
Salt and freshly ground black pepper to taste

Preparation method

  1. Wash the okra and dry them carefully with a clean kitchen towel
  2. Trim the ends and slice each okra diagonally into 1 cm pieces
  3. Set the sliced okra aside
  4. Finely chop the onion and garlic
  5. Cut the bell pepper in half, remove the seeds, and dice half of it into 1 cm cubes
  6. Lightly crush the cumin seeds in a mortar to release the aroma

  13. Incorporate the peeled tomatoes with their liquid
  14. Season with 1 teaspoon of salt and black pepper to taste
  15. Bring the mixture to a boil over medium heat
  16. Reduce the heat and cook for 5 minutes, stirring occasionally until the sauce thickens
  17. Add the sliced okra to the pot
  18. Cook for another 6 minutes, stirring from time to time, until the okra becomes slightly tender
  19. Avoid overcooking so that the okra maintains its ideal texture
  20. Serve immediately
