Where to find ingredients
Look for the potatoes, butter, eggs, and spices in the produce, dairy, and baking aisles of supermarkets or public markets. Flour is usually in the baking section; if needed, all-purpose flour can be used as a substitute for dusting.
Preparation method
- Peel the potatoes and place them in a pot with water
- Bring to high heat until it starts to boil
- Add salt and cook for about 20 minutes or until tender
- Drain all the water and pass the potatoes through a potato ricer
- Mix the butter and egg yolks well into the mashed potatoes
- Season with salt, black pepper, and nutmeg, stirring to combine the flavors
- Transfer the mixture to a piping bag fitted with a large tip
- Preheat the oven to 180°C
- Grease a baking sheet with butter and dust with all-purpose flour
- Shape potato rosettes on the baking sheet by pressing the piping bag
- Start in the center and move in a spiral to form the rosette
- Leave space between each portion on the baking sheet
- Bake in the preheated oven for about 30 minutes or until the surface is lightly golden
- Remove from the oven and serve immediately
Observations
These potato bites have a soft texture and a delicate shape, making them ideal as a side for main dishes or as a snack. Using a piping bag helps create an elegant, even presentation.
