Okra can be found in the produce section of most supermarkets. Canned diced tomatoes, olive oil, cumin seeds, salt, and pepper are widely available in the standard grocery aisles. Red onion, garlic, and red bell pepper are also common produce items.
Preparation method
- Wash the okra and dry them carefully with a clean kitchen towel
- Cut off the ends and slice each okra diagonally into 1 cm pieces
- Set the sliced okra aside
- Finely chop the onion and garlic
- Cut the bell pepper in half, remove the seeds, and dice half of it into 1 cm cubes
- Lightly crush the cumin seeds in a mortar and pestle to release their aroma
- Heat a medium saucepan over medium heat with the olive oil
- Add the onion and bell pepper
- Season with a pinch of salt and sauté for 3 minutes until the vegetables soften
- Add the garlic and crushed cumin
- Stir everything for 1 minute until fragrant
- Pour in the water and mix well to deglaze the pan
- Incorporate the diced tomatoes with their liquid
- Season with 1 teaspoon of salt and black pepper to taste
- Bring the mixture to a simmer over medium heat
- Reduce the heat and cook for 5 minutes, stirring occasionally until the sauce thickens
- Add the sliced okra to the pot
- Cook for another 6 minutes, stirring occasionally, until the okra are lightly tender
- Avoid overcooking so the okra maintains its ideal texture
- Serve immediately
