Where to find ingredients
Look for the potatoes and parsley in the produce section, bacon in the meat aisle, and olive oil and dairy spreads in the refrigerated dairy case. If needed, use a Catupiry-style cream cheese as a substitute for the original Brazilian-style spread.
Preparation method
- Cook the unpeeled medium potatoes until tender but still firm
- Drain the potatoes and let them cool slightly
- Cut the cooked potatoes into thick slices without separating them completely, like an accordion
- Grease a baking dish with olive oil
- Arrange the potatoes in the baking dish
- In a bowl, mix the requeijão, creamy requeijão, and bacon
- Stuff the slices of each potato with the requeijão and bacon mixture
- Sprinkle chopped parsley over the top
- Cover the baking dish with aluminum foil
- Bake in a preheated oven at 180°C for about 20-25 minutes, or until the filling is well heated and bubbling
