1 pinch cumin
Salt to taste
Basil to taste
6 tablespoons olive oil

Where to find ingredients
Ripe tomatoes, onion, garlic and basil can be found at supermarkets, vegetable markets and greengrocers. Olive oil, cumin and salt are commonly available in supermarkets and general food shops. If Debora tomatoes are not available, use ripe Italian or plum tomatoes as a substitute, keeping Debora or Italian tomatoes as ideal.
Preparation method
- Place the tomatoes in a pan and cook over heat until soft
- Pass the cooked tomatoes through a food mill or sieve to remove the skins and obtain a smooth purée
- In another pan, heat the olive oil
- Sauté the chopped onion and crushed garlic until lightly golden
- Add the processed tomato and the pinch of cumin to the pan
- Cook over low heat for 15 minutes
- Season with salt to taste
- Finish the recipe by adding fresh basil before serving
