Where to find ingredients
Breadcrumbs can be found in the baking or dry goods aisle of any local supermarket. Carrots and onions are staples available at all grocery stores or local farmers' markets. Chayote (often called 'chocho' or 'chow-chow' in some markets) can typically be found in the fresh produce section, specifically among tropical or specialty vegetables. If you cannot find fresh chayote, you may be able to source it at ethnic grocery stores or import shops that stock exotic produce; however, there isn't a direct local substitute that matches its specific texture and mild flavour.
Preparation method
- In a mixing bowl, combine the grated carrot and choko, chopped onion, chopped parsley, breadcrumbs and salt well
- Add the melted margarine to the mixture and stir until you have a smooth dough that is easy to shape
- With lightly greased hands, shape the mixture into small balls
- Place the meatballs onto a previously greased baking tray
- Place in a preheated oven at 180°C and bake for approximately 20 to 30 minutes, or until they are golden brown and firm
Observations
Vegetarian meatballs are a versatile and delicious way to get more veggies into your daily diet. This recipe features a blend of freshly grated carrot and chayote, which adds a lovely touch of natural sweetness and keeps the texture nice and moist. Breadcrumbs act as the binder, while onions provide that essential savoury kick. They’re a brilliant choice for a quick snack, a side dish, or even a light main meal if you’re looking to cut down on meat.
Best of all, there’s no need to pre-cook the vegetables, keeping the prep time to a minimum. These meatballs are oven-baked, giving them a soft interior and a slightly crispy exterior without the fuss of frying. Serve them warm and enjoy a nutritious, guilt-free bite.
