Easy Coconut Cuca (Receita de cuca de coco)

Ingredients

200 g unsalted butter
4 cups sugar (divided)
5 eggs
4 cups all-purpose flour
400 ml milk
200 ml coconut milk
200 ml water
1 tablespoon baking powder
100 g shredded coconut

Where to find ingredients

Look for the ingredients in the baking aisle, dairy case, and produce section of any grocery store or supermarket. If needed, substitute unsalted butter with plain butter, and use unsweetened shredded coconut for the topping.

Preparation method

  1. Prepare the topping: In a bowl, mix 1 1/2 cups of sugar with the shredded coconut
  2. Prepare the batter: Separate the yolks from the whites of the 5 eggs
  3. Beat the egg whites until stiff peaks form and set aside
  4. In another large bowl, beat the butter with 2 1/2 cups of sugar and the yolks until light and fluffy
  5. Add the all-purpose flour and milk alternately to the butter and yolk mixture, beginning and ending with the flour. Mix well after each addition
  6. Gently fold the beaten egg whites into the batter, stirring from the bottom up so you do not lose the air
  7. Add the baking powder and mix gently
  8. In a saucepan, heat the coconut milk and water. Add this mixture to the batter and stir until smooth
  9. Pour the batter into a greased and floured pan
  10. Spread the coconut and sugar topping over the batter
  11. Bake in a preheated 180°C oven for about 30 to 40 minutes, or until the cake is golden and firm to the touch. Test with a toothpick to check doneness
