Ingredients
200 g okra (about 20 pods)
1/2 red bell pepper
1/2 red onion
1 garlic clove
1 can peeled tomatoes, diced (with the liquid)
2/3 cup water
1 tablespoon olive oil
1/2 teaspoon cumin seeds
Salt and freshly ground black pepper to taste
1/2 red bell pepper
1/2 red onion
1 garlic clove
1 can peeled tomatoes, diced (with the liquid)
2/3 cup water
1 tablespoon olive oil
1/2 teaspoon cumin seeds
Salt and freshly ground black pepper to taste
Where to find ingredients
Look for okra, tomatoes, peppers, onions, garlic, cumin, olive oil, and pantry seasonings at local open-air markets, supermarkets, and produce stalls. If canned peeled tomatoes are unavailable, substitute with ripe tomatoes cooked down and lightly crushed.
Preparation method
- Wash the okra and dry it carefully with a clean dish towel
- Trim the ends and slice each okra pod diagonally into 1 cm pieces
- Set the sliced okra aside
- Finely chop the onion and garlic
- Halve the bell pepper, remove the seeds, and dice half of it into 1 cm cubes
- Lightly crush the cumin seeds in a mortar to release their aroma
- Heat a medium saucepan over medium heat with the olive oil
- Add the onion and bell pepper
- Season with a pinch of salt and sauté for 3 minutes until the vegetables soften
- Add the garlic and crushed cumin
- Stir everything for 1 minute until fragrant
- Pour in the water and mix well to loosen the flavour from the bottom of the pan
- Add the peeled tomatoes with their liquid
- Season with 1 teaspoon salt and black pepper to taste
- Let the mixture come to a boil over medium heat
- Lower the heat and cook for 5 minutes, stirring occasionally, until the sauce thickens
- Add the sliced okra to the pan
- Cook for another 6 minutes, stirring now and then, until the okra is slightly tender
- Avoid overcooking so the okra keeps its ideal texture
- Serve immediately
Observations
This stew brings together okra’s distinctive texture with a fragrant, well-seasoned sauce, making it an excellent side for everyday meals.
