Lobster with Garlic and Oil

Ingredients

1 kg lobster, natural or tail fillet
10 large cloves garlic (or 2 tablespoons garlic paste)
1/2 cup olive oil
1 tablespoon mixed herbs, to taste
2 chopped onions
1 chopped green bell pepper
1 chopped red bell pepper
4 ripe chopped tomatoes
4 sprigs chopped cilantro
Salt, to taste

Where to find ingredients

Lobster and fresh produce can typically be found at seafood markets and grocery stores. Olive oil, herbs, onions, bell peppers, tomatoes, cilantro, and salt are widely available at most supermarkets.

Preparation method

  1. Cook the lobster in a pressure cooker with a little water and a drizzle of olive oil for 10 minutes
  2. If using lobster tail fillet, cook in a regular pot for 20 minutes with a little olive oil
  3. Drain all the water after cooking
  4. Let the lobster cool completely
  5. Separate the meat from the shell
  6. Remove the central vein located on the upper part of the body
  7. Season the meat with crushed garlic and herbs
  8. Let it rest for at least 30 minutes to develop the flavor
  9. Heat the olive oil over low heat
  10. Fry the lobster pieces until lightly golden
  11. Remove the lobster and keep warm
  12. Sauté the onion, bell peppers, tomatoes, and cilantro in the same olive oil used for frying
  13. Serve the hot lobster accompanied by the sautéed vegetables

Observations

This recipe uses simple techniques to enhance the texture and natural flavor of the crustacean. The secret lies in the marinating time and the careful preparation of the sautéed accompaniments.
