Where to find ingredients
Prawns, tomatoes, lemons, herbs and coconut milk can be found in fish markets, supermarkets, produce markets and general food shops. Dendê palm oil may be available in speciality shops or stores with Brazilian, African or international ingredients; red palm oil can be used as a substitute, keeping dendê palm oil as ideal.
Preparation method
- Start by cleaning the prawns well, removing shells and veins, and washing them under running water
- Season the prawns with salt, pepper, lemon juice and the chopped herbs, leaving them to marinate for a few minutes
- Heat the oil in a pan and sauté the prawns until well browned
- Add the chopped tomatoes to the pan and cook until they break down, creating a thick sauce
- Pour in the coconut milk, cover the pan firmly and cook over low heat for about 10 minutes to deepen the flavours
- Finish by stirring in the dendê palm oil and adjust the pepper to your preference before serving
