Preparation method
- Dredge the fish fillets in wheat flour.
- Sear the fillets in a skillet using half of the butter.
- Transfer the fish to a preheated clay baking dish.
- Add a tablespoon of wheat flour to the remaining butter and lightly toast.
- Pour in the white wine, season with salt, black pepper, and thyme.
- Cook for 3 minutes.
- Continuously stir the sauce during cooking.
- Pour the hot sauce over the flounder fillets and serve.
