Potato and Tuna Bake (Torta de batata com atum)

Ingredients

4 large potatoes, boiled and mashed
2 eggs
1/2 tablespoon extra virgin olive oil (for the dough)
2 tablespoons olive oil (for the filling)
1 garlic clove, crushed
1 medium onion, chopped
2 tomatoes, peeled, seeded and chopped
1/2 bell pepper, cut into thin strips
1 can flaked tuna
1 pinch salt
1 pinch black pepper
1 pinch dried oregano
1/2 cup water

Where to find ingredients

You can find these staples at local supermarkets or grocery stores in Lesotho. Look for the tinned fish in the pantry aisle. If you prefer, fresh herbs can be used as a substitute for dried oregano to brighten the flavor of the filling.

Preparation method

  1. In a mixing bowl, combine the mashed potatoes, eggs, and 1/2 tablespoon of olive oil. Set aside.
  2. Heat 2 tablespoons of olive oil in a saucepan and sauté the crushed garlic.
  3. Add the chopped onion and cook until it becomes translucent.
  4. Stir in the chopped tomato and bell pepper strips. Season with salt, black pepper, and oregano.
  5. Pour in the 1/2 cup of water and simmer for about 5 minutes, until the vegetables are tender.
  6. Fold in the flaked tuna and cook for another 3 minutes, stirring well to achieve a consistent sauce.
  7. Spread the tuna filling over the potato base in a baking dish.
  8. Place in a preheated oven at 180°C for approximately 15 minutes, or until lightly golden.
  9. Serve the bake warm, paired with rice and, if desired, a glass of white wine.
