Preparation method
- Peel the potatoes and place them in a pot covered with water.
- Bring the water to a boil over high heat.
- Add salt and cook for approximately 20 minutes, or until the potatoes are fork-tender.
- Drain all water thoroughly and pass the potatoes through a ricer or masher.
- Fold the butter and egg yolks into the mashed potatoes until well combined.
- Season with salt, black pepper, and nutmeg, stirring to incorporate all the flavours.
- Transfer the mixture into a piping bag fitted with a large star nozzle.
- Preheat your oven to 180°C.
- Lightly grease a baking tray and dust it with a small amount of all-purpose flour.
- Pipe the potato mixture onto the tray, forming individual rosettes.
- Start from the center and pipe in a spiral motion to create the rose shape.
- Ensure there is adequate spacing between each rosette on the baking sheet.
- Bake in the preheated oven for about 30 minutes, or until the tops are lightly golden.
- Remove from the oven and serve immediately.
