Crispy fried polenta (Polentinha frita)

Ingredients

Paper towels for draining
1 liter vegetable oil for frying
1 cup fine cornmeal (milharina)
Salt to taste
Black pepper to taste
5 cups water

Where to find ingredients

Find cornmeal (milharina), oil, salt, and pepper at local supermarkets. If milharina is unavailable, fine yellow cornmeal or polenta flour are suitable substitutes.

Preparation method

  1. In a saucepan, add the water and bring to a boil over medium heat
  2. When the water is hot, add the cornmeal gradually, stirring constantly to avoid lumps
  3. Season with salt and black pepper to taste
  4. Continue stirring until the mixture thickens and begins to pull away from the bottom of the pan, approximately 15 minutes
  5. Turn off the heat and let the polenta cool in the pan for a few minutes
  6. Grease a baking tray or heat-proof dish with a little olive oil or vegetable oil
  7. Transfer the warm polenta to the tray, spread it out using the back of a spoon, and let it cool completely
  8. Once cooled, cover and refrigerate for at least one hour or overnight
  9. Heat the oil in a deep pan until it reaches approximately 180°C
  10. Remove the polenta from the refrigerator, place a cutting board over the dish, and invert to unmold it
  11. Cut the polenta into uniform sticks or squares
  12. Fry the pieces in hot oil, in small batches, for about 10 minutes or until golden and crispy
  13. Remove with a slotted spoon and place on paper towels to drain excess oil
  14. Serve warm as a snack or side dish
