1 can diced peeled tomatoes (with juices)
2/3 cup water
1 tablespoon olive oil
1/2 teaspoon cumin seeds

Where to find ingredients
You can find fresh okra, bell peppers, and onions at local open-air markets or neighborhood grocery stores. Canned tomatoes, cumin, and olive oil are staples available in the pantry aisles of general provision shops throughout the region.
Preparation method
- Wash the okra thoroughly and dry each piece carefully with a clean kitchen towel.
- Trim the stems and slice each okra pod diagonally into 1 cm pieces.
- Set the sliced okra aside.
- Finely dice the onion and mince the garlic.
- Cut the bell pepper in half, remove the seeds, and dice half of it into 1 cm cubes.
- Lightly crush the cumin seeds in a mortar and pestle to release their aromatic oils.
- Heat a medium-sized pot over medium heat with the olive oil.
- Add the diced onion and bell pepper to the pot.
- Season with a pinch of salt and sauté for 3 minutes until the vegetables have softened.
- Add the minced garlic and the crushed cumin.
- Stir for 1 minute until the mixture becomes fragrant.
- Pour in the water, stirring well to deglaze the pot and incorporate the browned bits.
- Add the canned tomatoes with their liquid.
- Season with 1 teaspoon of salt and black pepper to taste.
- Bring the mixture to a gentle boil over medium heat.
- Lower the heat and simmer for 5 minutes, stirring occasionally until the sauce thickens.
- Gently fold the sliced okra into the pot.
- Cook for another 6 minutes, stirring occasionally, until the okra is tender.
- Be careful not to overcook the okra to ensure it maintains its signature texture.
- Serve immediately.
Observations
This stew artfully balances the unique, tender-crisp texture of okra with a fragrant, seasoned tomato base, making it an excellent side dish for everyday meals.
