Where to find ingredients
Beef cuts like bottom or top round are standard at any local butcher shop or supermarket meat aisle. Calabresa sausage is a smoked, cured Brazilian pork sausage; check the 'international' or 'Latin' section of large supermarkets, or look for specialty delis that stock smoked chorizo or similar cured sausages as a realistic substitute if needed. Onion soup mix is commonly found in the dry goods or soup aisle of most grocery stores. The remaining fresh vegetables, cheese, and pantry staples are available in the produce, dairy, and baking aisles of any standard supermarket.
Preparation method
- Season the beef slices with salt and black pepper
- Let the beef marinate for 30 minutes
- On each beef slice, place a strip of calabresa sausage
- Add a strip of carrot
- Add a strip of red bell pepper
- Place two slices of mozzarella cheese
- Carefully roll up each beef slice
- Secure the beef rolls with toothpicks
- In a pressure cooker, melt the butter over high heat
- Sear the beef rolls in the hot pot, turning to brown all sides
- Add the minced garlic and sliced onions
- Sauté for one minute
- Stir in the water and the powdered onion soup mix
- Mix well to dissolve the sauce ingredients
- Seal the pressure cooker lid
- Cook over low heat for 30 minutes after the pressure starts building
- Turn off the heat and let the pressure release naturally
- Open the pressure cooker safely
