1 small bottle of coconut milk
1 sachet of powdered seasoning (your choice)

Where to find ingredients
You can find fresh seafood and staples like cassava (mandioca), coconut milk, and annatto (colorau) at local public markets or the produce sections of general grocery stores. If fresh mandioca is unavailable, it can be substituted with frozen, pre-peeled cassava; the annatto can be replaced with sweet paprika if preferred.
Preparation method
- Thoroughly wash the shrimp.
- Heat the oil or margarine in a large pot over medium heat.
- Sauté the whole shrimp with their heads until they turn bright red.
- Remove the shrimp from the pot and set aside to cool.
- Peel the cassava, chop into pieces, and place into a blender.
- Pour the coconut milk into the blender.
- Add the roasted shrimp heads to the blender.
- Take 250g of the cooked, peeled, and headless shrimp and add to the blender.
- Pour in 500ml of water and blend until smooth.
- In the same pot used for the shrimp, add the minced garlic and sauté until fragrant.
- Add the powdered seasoning, annatto, salt, and the monosodium glutamate if using.
- Sauté the spices for a few moments to release their aromas.
- Pour the blended mixture into the pot with the seasonings.
- Stir well and add a little extra water if needed to reach your desired consistency, being careful not to make it too thin.
- Simmer for about 15 minutes over low heat, stirring occasionally.
- At the end of cooking, stir in the cognac, mix thoroughly, and remove from heat.
