Ingredients

2.5 litres cold water
500g green beans (feijão verde)
2 beef stock cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon fresh coriander, chopped
2 1/2 cups white rice
150g queijo coalho, thinly sliced

Preparation method

  1. Soak the green beans in water overnight.
  2. The following day, drain the beans and place them in a pot with 2.5 litres of cold water and the beef stock cubes.
  3. Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
  4. While the beans are simmering, heat the oil in a separate large pot.
  5. Sauté the paio sausage, grated onion, and crushed garlic in the hot oil until golden brown.

  10. Cover the pot again and let it sit for a few minutes so the residual steam melts the cheese.
  11. Serve the Baião de Dois hot, ideally with a side of fried or roasted carne-de-sol if desired.
