Ingredients

Preparation method
- Finely dice the onion
- Bring the water to a boil
- Heat a medium saucepan over low heat
- Add the olive oil and onion
- Add a pinch of salt
- Sauté the onion for 2 minutes until soft
- Add the bay leaf to the pan
- Add the rice and stir for 1 minute so the grains are well coated in oil
- Pour the boiling water over the rice
- Season with the remaining salt and stir gently
- Increase the heat to medium
- Do not stir the rice again from this point on
- Wait until the water level reaches the surface of the rice
- Lower the heat and partially cover the pan
- Cook until all the water is absorbed
- Test for doneness by inserting a fork and pushing aside the grains at the bottom of the pan
- Leave on the heat for a few more moments if there is still moisture
- Turn off the heat and keep the pan covered for 5 minutes to let the steam finish the cooking process
- Fluff the grains gently with a fork before serving
