Ingredients
6 eggs
2 cups sugar
1 can (350 ml) cola soft drink
2 cups wheat flour
1 tablespoon baking powder
2 cups sugar
1 can (350 ml) cola soft drink
2 cups wheat flour
1 tablespoon baking powder
Where to find ingredients
In Kenya, buy wheat flour, sugar, eggs and baking powder from supermarkets, dukas or grocery shops, checking the baking aisle and egg section. Cola soft drink is usually available in the drinks aisle or fridges; use the original ingredient rather than changing the flavour.
Preparation method
- Open the can of soft drink and let it stand for a few minutes so the gas can settle
- In a bowl, beat the egg yolks with the sugar until pale and fluffy
- Add the cola soft drink to the egg yolk and sugar mixture
- Mix well until all the ingredients are fully combined and dissolved
- Gently fold the sifted wheat flour and the beaten egg whites into the batter
- Lastly, add the baking powder and mix gently so you do not knock the air out of the egg whites
- Pour the batter into a greased and floured cake tin
- Bake in a preheated medium oven at 180°C for about 40 minutes, or until a skewer inserted in the centre comes out clean
Observations
This cola soft drink cake is a classic, surprisingly simple recipe for anyone who wants a homemade sweet with a little twist. The soft drink gives the batter a subtle, familiar flavour and also helps create a very light, soft texture. It is a good choice for afternoon tea or for serving guests a plain cake with an unexpected, tasty result.
