Crispy Oven-Roasted Mandioca

Ingredients

1.5 kg mandioca (or 1.2 kg if already peeled)
3 tablespoons olive oil
Salt to taste
Freshly cracked black pepper to taste

Preparation method

  1. Preheat your oven to 220 ºC
  2. Peel the mandioca roots thoroughly
  3. Slice the roots into large chunks, about 8 cm long
  4. Wash the pieces well under running water
  5. Place the mandioca in your pressure cooker
  6. Cover with water, ensuring you don't fill the pot more than two-thirds full
  7. Cover and place over high heat
  8. Once the pot reaches full pressure and starts to hiss
  9. Turn the heat down low and cook for 5 minutes
  10. The pieces should be tender but still firm enough to slice easily
  11. Turn off the heat
  12. Let all the steam release naturally before opening the lid
  13. Drain the water well using a colander
  14. Allow the pieces to cool slightly so they are safe to handle
  15. Grease a large roasting tray with half of the olive oil
  16. Cut the cooked chunks in half lengthwise
  17. Divide each half into batons about 2 cm thick
  18. Arrange the batons on the tray in a single layer, making sure they don't overlap
  19. Drizzle with the remaining olive oil
  20. Season generously with salt and black pepper
  21. Roast in the oven for about 40 minutes
  22. Flip the batons halfway through so they get golden and crispy all over
  23. Remove from the oven and serve while hot
