You can source tinned sardines, tomato sauce, and peas at local supermarkets. Fresh shrimp, tomatoes, and spring onions are readily available at municipal markets. Coarse corn meal and cassava flour can be found in the international or grain aisles of larger grocery stores.
Preparation method
- In a large pot, combine the diced tomatoes, black olives, chopped hearts of palm, garden peas, tomato sauce, and shrimp.
- Cook over medium heat, adding water and salt to taste, until you have a thick, well-seasoned sauce.
- In a separate mixing bowl, combine the coarse corn meal and the cassava flour.
- Gradually pour the hot sauce over the flour mixture, stirring constantly until you reach a moist and uniform consistency.
- Preheat your steamer or couscousier.
- Pack the mixture into the steamer, shaping it into the form of the mould.
- Decorate the top with slices of hard-boiled eggs and pieces of tinned sardines.
- Steam over low heat for approximately 20 to 30 minutes, or until the loaf is firm and cooked through.
- Serve warm, garnished with the chopped spring onions and coriander.
