500 g cassava, peeled and cut into chunks

1.5 kg beef ribs, cut into pieces
1 tbsp lemon juice
1 litre boiling water
500 g cassava, peeled and cut into chunks
1 malagueta pepper, crushed (or to taste)
1 medium onion, thinly sliced
Salt to taste
Where to find ingredients
Beef ribs and onions are readily available at local butchers and supermarkets. Cassava (yuca) can be found in the produce or frozen sections of specialty international grocery stores. Malagueta pepper can be substituted with bird's eye chili if unavailable.
Preparation method
- Heat the oil in a large pot over medium-high heat
- Add the beef rib pieces and sear them until browned on all sides
- Pour in the lemon juice and add the boiling water
- Cook the ribs over low heat, partially covered, stirring occasionally, until the meat is tender. Add more boiling water if necessary to maintain moisture and prevent the pot from drying out
- Add the cassava chunks to the pot
- Stir regularly and continue cooking until the cassava is fully cooked and tender, starting to break down slightly to help thicken the broth
- Season with the crushed malagueta pepper and adjust salt to taste
- Add the sliced onion over the meat and cassava
- Cover the pot and cook for a few more minutes, just until the onions have wilted while retaining their shape
- Transfer the ribs and cassava to a serving platter, top with the sliced onions, and serve immediately
- Pairs perfectly with white rice
