2 cups sugar
1 cup orange juice, or good-quality orange soft drink

Where to find ingredients
Wheat flour, sugar, eggs, baking powder and oranges or orange juice are available in supermarkets, markets and corner shops. If using orange soft drink as listed in the recipe, choose a good-quality one from the drinks aisle.
Preparation method
- Start by beating the egg whites until they form stiff peaks and then add the yolks and sugar, beating well until the mixture is smooth
- Fold the wheat flour and orange juice into the batter, mixing gently
- Finish by adding the baking powder and mixing only until incorporated
- Pour the batter into a tin that has already been greased and floured
- Bake in a preheated oven at 180°C for about 40 minutes, or until golden and firm
Observations
This recipe is practical and uses basic pantry ingredients. The secret to a well-aerated cake is beating the egg whites properly before folding in the rest of the batter.
