Baked Jiló with Cheese Gratin (Jiló ao forno gratinado)

Ingredients

6 medium jilós
1 medium onion, finely chopped
2 garlic cloves, minced
1 medium tomato, chopped
2 tablespoons butter
Salt to taste
1 whole egg
Grated parmesan cheese to taste

Where to find ingredients

You can find fresh jiló at local Gambian markets or specialty produce vendors. The remaining ingredients such as onions, garlic, tomatoes, and dairy products are readily available in supermarkets, open-air markets, or local stalls. If parmesan is unavailable, a sharp, hard-aged cheese can be used as a substitute.

Preparation method

  1. Wash the jilós and slice them into thin rounds.
  2. Heat the butter in a pan over medium heat.
  3. Sauté the onion and garlic until they are golden and fragrant.
  4. Add the chopped tomato and salt, cooking for a few more minutes.
  5. Add the egg to the mixture and stir quickly until combined.
  6. Grease a baking dish with a little butter.
  7. Arrange half of the jiló rounds at the bottom of the dish.
  8. Spread half of the sautéed mixture over the jiló.
  9. Sprinkle a layer of grated parmesan cheese over the top.
  10. Repeat the layers with the remaining jiló and the rest of the sautéed mixture.
  11. Finish by sprinkling more parmesan cheese on top.
  12. Bake in a preheated oven at 180°C for approximately 20-25 minutes, or until the top is golden and the jiló is tender.

Observations

Baked jiló is a classic preparation that balances the vegetable's characteristic mild bitterness with a savory, aromatic base. By layering the sliced jiló with a sautéed mixture and topping it with parmesan, this dish becomes a comforting and savory vegetarian option that pairs beautifully with main courses.

This straightforward version is ideal for everyday cooking, relying on minimal ingredients and a simple process that results in a tender, satisfying, and beautifully gratinéed final dish.
