Where to find ingredients
You can find fresh courgettes and lemons at local produce stalls in Banjul or Serrekunda markets. Olive oil and coriander seeds are available at most supermarkets and larger grocery stores stocking imported pantry essentials.
Preparation method
- Wash the courgette thoroughly under running water using a vegetable brush
- Pat dry with a clean kitchen towel
- Trim off and discard the ends
- Cut the courgette crosswise to separate the thicker section from the thinner end
- Slice the thicker part lengthwise in half, then cut each half into three strips to create batons
- Divide the thinner section in half crosswise so all pieces are of similar size
- Cut each of these pieces into four wedges
- Heat a non-stick frying pan over medium heat
- Add a drizzle of olive oil and arrange the courgette pieces cut-side down in the pan
- Grill for about 2 minutes until they are golden brown
- Lightly crush the coriander seeds in a mortar and pestle to release their fragrance
- Flip the batons using tongs to brown the opposite side
- Add the crushed coriander seeds, season with salt, and drizzle with a little more olive oil
- Sauté for another minute until the courgette is tender and well-seasoned
- Finish by turning off the heat and stirring in the lemon juice
- Serve immediately
