Soft Orange Cake (Bolo de laranja)

Ingredients

2 cups wheat flour
2 cups sugar
1 cup orange juice (or good-quality orange soft drink)
4 eggs
1 teaspoon baking powder

Where to find ingredients

In Ghana, wheat flour, sugar, eggs, baking powder and oranges are widely available in supermarkets, open markets and provision shops. Orange soft drink can be used exactly as stated when choosing that option.

Preparation method

  1. Start by beating the egg whites until stiff, then add the yolks and sugar, beating well until the mixture is smooth
  2. Fold the wheat flour and orange juice into the batter gently
  3. Finish by adding the baking powder and mixing only until incorporated
  4. Pour the batter into a greased and floured tin
  5. Bake in a preheated oven at 180°C for about 40 minutes, or until golden and firm

Observations

This practical cake uses everyday pantry ingredients and gives a soft, airy result. The key is to beat the egg whites properly before folding in the flour and orange juice, then bake until the cake is golden and firm.
