Where to find ingredients
Find fresh vegetables at local markets or supermarkets. Olive oil, paprika, and common spices are available in any grocery shop. Use sweet paprika as a standard substitute if smoked paprika is too intense.
Preparation method
- Preheat the oven to 220 ºC
- Wash the cauliflower florets in a bowl of water
- Remove the florets from the water with your hands, ensuring any dirt remains at the bottom of the container
- Drain well in a sieve
- Thoroughly clean the radish skins using a small brush under running water
- Dry the radishes and cut them in half, or into quarters if they are large
- Peel the carrots and cut them in half widthwise
- Cut the thinner part of the carrot into four lengthwise strips
- Cut the thicker part of the carrot into six lengthwise strips
- Distribute all the vegetables on a large baking tray
- Drizzle the vegetables with the olive oil
- Sprinkle with the paprika, salt, and black pepper
- Toss everything very well to ensure each piece is coated with the seasoning and oil
- Spread the vegetables on the tray, maintaining space between them so they roast evenly and brown well
- Place in the oven for approximately 30 minutes
- Turn the vegetables with a spatula halfway through the cooking time to brown all sides
- Remove from the oven as soon as they are tender and golden
- Serve immediately
