Preparation method
- Wash the zucchini skin thoroughly under running water using a vegetable brush.
- Dry with a clean kitchen towel.
- Trim and discard the ends.
- Cut the zucchini crosswise to separate the thicker part from the thinner end.
- Slice the thick part in half lengthwise and cut each half into three strips to create sticks.
- Divide the thin part in half crosswise so that all pieces have similar sizes.
- Cut each of these pieces into four parts.
- Heat a non-stick frying pan over medium heat.
- Add a drizzle of olive oil and place the zucchini pieces cut-side down.
- Grill for about 2 minutes until golden brown.
- Lightly crush the coriander seeds in a mortar to release the aroma.
- Turn the sticks using tongs to brown the opposite side.
- Add the coriander seeds, season with salt, and add a little more olive oil.
- Sauté for another 1 minute until the zucchini is tender and seasoned.
- Finish by turning off the heat and incorporating the lemon juice.
- Serve immediately.
