1 garlic clove
1 tin of chopped tinned tomatoes (with the juice)
160 ml water
1 tbsp olive oil
1/2 tsp cumin seeds
Salt and freshly ground black pepper to taste
Where to find ingredients
Okra, onions, peppers, and garlic are readily available at local markets or supermarkets. Cumin seeds and tinned tomatoes can be found in the dry goods aisle of most grocery stores.
Preparation method
- Wash the okra pods and pat them dry thoroughly with a clean kitchen towel
- Trim the tops and slice each okra diagonally into 1 cm pieces
- Set the sliced okra aside
- Finely mince the onion and the garlic
- Cut the bell pepper in half, remove the seeds, and chop half of it into 1 cm cubes
- Lightly crush the cumin seeds in a mortar to release their aroma
- Heat a medium-sized saucepan over medium heat with the olive oil
- Add the onion and the chopped bell pepper
- Season with a pinch of salt and sauté for 3 minutes until the vegetables soften
- Add the minced garlic and the crushed cumin seeds
- Stir for 1 minute until fragrant
- Pour in the water and stir well to scrape up any flavour from the bottom of the pan
- Incorporate the chopped tinned tomatoes with their juice
- Season with 1 teaspoon of salt and black pepper to taste
- Bring the mixture to a boil over medium heat
- Reduce the heat and simmer for 5 minutes, stirring occasionally until the sauce thickens
- Add the sliced okra to the pan
- Cook for another 6 minutes, stirring from time to time, until the okra is just tender
- Avoid overcooking so the okra retains its ideal texture
- Serve immediately
