Preparation method
- Peel the squash and cut the flesh into roughly 2 cm cubes.
- Finely mince the garlic cloves.
- Place a large pan or frying pan over medium heat and add the olive oil.
- Add the garlic and sauté for just 1 minute to infuse the oil, taking care not to let it brown.
- Add the cubed squash and salt to the pan.
- Stir the ingredients occasionally for 10 minutes, until the squash starts to soften.
- Cover the pan with a lid and reduce the heat to the lowest setting.
- Cook for 5 minutes, allowing the squash to finish tenderising in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred consistency.
- Turn off the heat and serve immediately.
