Where to find ingredients
You can find fresh jiló at specialist shops stocking exotic or Brazilian produce. Parmesan can be found in the deli or dairy aisle of any local supermarket. Use butter from the refrigerated dairy section.
Preparation method
- Wash the jilós thoroughly and slice them into thin rounds.
- In a pan, melt the butter over medium heat.
- Sauté the onion and garlic until they are soft and golden.
- Stir in the chopped tomato and salt, cooking for a few more minutes until the tomato breaks down.
- Add the egg to the pan and mix quickly to incorporate it into the mixture.
- Grease a baking dish with a little butter.
- Arrange half of the jiló rounds in an even layer at the bottom of the dish.
- Spread half of the sautéed mixture over the jiló.
- Sprinkle a generous layer of grated parmesan cheese over the top.
- Repeat the layers once more with the remaining jiló and the rest of the sautéed mixture.
- Finish by topping with a final layer of grated parmesan cheese.
- Bake in a preheated oven at 180°C for approximately 20 to 25 minutes, or until the top is golden brown and the jiló is tender.
Observations
Baked jiló is a traditional dish that transforms the fruit's characteristic bittersweet flavour into something truly comforting. By layering the sliced jiló with a savoury sauté and finishing it under the grill with parmesan, this dish becomes a fantastic vegetarian option that is both easy to prepare and deeply flavourful.
