Where to find ingredients
All ingredients can be found in the produce, spice, and dry goods aisles of standard supermarkets or local farmers' markets.
Preparation method
- Preheat your oven to 200°C (gas mark 6).
- Wash the okra under running water, drain and pat them completely dry with a clean tea towel; this step is essential to ensure they turn out crispy.
- Slice the okra pods in half lengthways.
- In a large mixing bowl, combine the olive oil, grated ginger, garlic, ground cumin, ground coriander, cayenne pepper, and a pinch of salt.
- Add the halved okra to the bowl and toss well so that each piece is thoroughly coated in the spiced mixture.
- Sprinkle the cornmeal (fubá) and plain flour over the okra and toss again to coat everything evenly.
- Spread the okra pieces out onto a large baking tray, ideally non-stick, ensuring they are spaced apart in a single layer.
- Bake for approximately 30 minutes, remembering to turn or toss the okra halfway through the cooking time to ensure they brown evenly.
- Remove from the oven as soon as they are golden brown and serve immediately.
Observations
This recipe transforms okra into a snack or side dish with a surprising texture. The secret is to keep the vegetables very dry before seasoning and to use a blend of flours to ensure a crunchy finish in the oven.
