1/2 tbsp fresh chives, finely chopped
1 1/2 cups plain flour
Sea salt to taste
Water for boiling the rice
8 tbsp vegetable oil (for boiling and sautéing)
Where to find ingredients
You can find long-grain rice, fresh herbs (parsley, coriander, chives), and plain flour in the dry goods and fresh produce aisles of any local supermarket or greengrocer.
Preparation method
- Cook the rice in salted water until it is very soft.
- Drain off any excess water thoroughly.
- In a blender or food processor, blitz the cooked rice with the egg, parsley, coriander, and chives until the mixture is completely smooth.
- Transfer the mixture into a saucepan.
- Gradually fold in the flour, stirring well to combine.
- Place the pan over low heat, stirring constantly until the dough pulls away from the sides and forms a single ball.
- Season with salt to your preference.
- Remove the dough from the heat and allow it to cool slightly until it is comfortable to handle.
- On a clean, lightly floured surface, roll the dough into ropes approximately 2 cm in diameter.
- Cut the ropes into 2 cm long pieces to form the gnocchi.
- Bring a large pot of water to a boil with a pinch of salt and 4 tablespoons of vegetable oil.
- Drop the gnocchi into the boiling water in small batches to ensure they do not stick together.
- Remove the gnocchi with a slotted spoon as soon as they float to the surface, which indicates they are cooked.
- Drain the cooked gnocchi; you may serve them immediately with your favourite sauce or briefly sauté them in a pan with the remaining vegetable oil for a slightly crisp texture.
Observations
Rice gnocchi offers a unique variation on classic Italian pasta, adapted into a Brazilian style that relies on cooked rice as its main component. This homemade recipe is an excellent choice for those looking for something a little different, yet inherently savoury and straightforward to prepare. By blending cooked rice with egg, fresh herbs, and plain flour, you achieve a soft, delicate texture that pairs beautifully with any sauce of your choice.
