Ingredients

300g mozzarella cheese, chopped
500ml milk
3 eggs
Plain flour for dusting
1 cup tomato sauce
1 medium onion, chopped
Dried oregano to taste
10 green olives, pitted and chopped
Salt to taste
250g cooked ham, chopped
3 tbsp cornflour
1 tbsp dried oregano
250ml vegetable oil
1 tbsp baking powder
1 1/2 cups plain flour
Margarine for greasing
200ml coconut milk
Grated Parmesan cheese to taste

All ingredients are standard items found in any major UK supermarket. Coconut milk is located in the world foods aisle; cornflour, flour, and baking powder in the baking aisle; mozzarella and ham in the refrigerated deli section.

Preparation method

  1. Add the coconut milk, eggs, milk, oil, flour, cornflour, baking powder, and salt to a blender and pulse until you have a smooth, homogeneous batter
  2. Set the batter aside
  3. In a separate bowl, mix the chopped onion, chopped olives, tomato sauce, 1 tablespoon of oregano, and salt to taste
  4. Set the filling mixture aside
  5. Grease a rectangular baking tin (approximately 28cm x 19cm x 5cm) with butter and lightly dust with flour
  6. Pour half of the prepared batter into the baking tin
  7. Evenly distribute the diced ham, mozzarella, and the tomato sauce mixture over the base layer
  8. Pour the remaining batter over the top to cover the filling
  9. Sprinkle the top with grated parmesan and a pinch of dried oregano
  10. Bake in a preheated oven at 180°C for approximately 45 minutes, or until the top is golden and the centre is set
