Easy and Tender Pressure Cooker Pot Roast (Carne de panela de pressão e)

Ingredients

1kg beef (chuck, shoulder, or brisket) or pork loin, cut into large chunks
Optional: medium potatoes, peeled and sliced into thick rounds
3 to 4 beef stock cubes
8 large onions, sliced into thick rounds

Where to find ingredients

Beef cuts such as chuck or brisket are readily available at any local butcher or the supermarket meat counter. Beef stock cubes can be found in the store cupboard essentials aisle. Onions and potatoes are staple produce items found in the fresh vegetable section.

Preparation method

  1. Line the bottom of your pressure cooker with half of the onion slices.
  2. Crumble 1 or 2 stock cubes over the layer of onions.
  3. Arrange the chunks of meat on top of the onions.
  4. Season the meat with the remaining crumbled stock cubes.
  5. Cover the meat completely with the remaining onion slices.
  6. Secure the pressure cooker lid and cook over medium heat for approximately 25 minutes once full pressure is achieved.
  7. Turn off the heat and allow the pressure to release naturally before opening.
  8. If including potatoes, move the onions aside, add the potato rounds, replace the lid, and cook for an additional 10 minutes once back up to pressure.
  9. Always allow the pressure to dissipate naturally before removing the lid.

Observations

Pressure-cooked pot roast is a quintessential comfort dish, celebrated for its efficiency and deep, savoury flavour. By using a pressure cooker, you transform tougher cuts of meat into succulent, tender morsels that fall apart with ease, making it a perfect solution for a wholesome midweek supper. The magic lies in the simple layering of aromatics, which creates a rich base without the need for constant monitoring. Serve this hearty meal alongside steamed basmati rice or a crisp green salad to balance the richness of the slow-cooked meat.
